That's a fantastic setup! I considered getting a U-110 at some point I think but ended up going with some early EMU stuff out of curiosity.
The MOTU MIDI Express 128 is pretty awesome. I have one I've used to 'power' my setup too and it works great; virtually plug-n-play with most modern computers.
I too do most of my stuff on modern hardware as well. The old computer idea was fun but it turns out I do not have as much space as I thought I did, and basically I'd need a second workstation or something in order to do it justice, so, it's sort of tabled for me for the time being (and I was just using an early Core 2 with XP and occasionally Win98SE!).
I have considered getting a Mini PC for it or something, but I don't know the reality of installing older versions of Windows on newer hardware, especially ones without IDE and such. I think there are a few interesting videos online about getting industrial-style mini PC's and running old software/OSes on them, but it seems somewhat complicated.
