Per your advice, I did use cast iron cookware. I served the hash for breakfast with scrambled eggs and a smoothie. I hope you will be happy to know that all of the hash was consumed.

I don't normally cook on cast iron, but my only decent non-stick pan finally stopped, well, non-sticking.
The microwave trick is honestly 50% of the reason I own a microwave (the other 50% being microwave popcorn and the occasional box of rice pilaf). It's imho one of the few things the microwave does really well, and it definitely saves time and hassle over trying to cook the potatoes in the pan or oven.
