Personally, I would choose stereo recording. It's almost an expectation now in sampling and lets you record with the mics farther from the instrument without an unpleasantly centered roomy sound. You can also experiment with mic'ing things in different places at the same time and blending them.
On the other hand, having a decent single condenser is a good thing to have, but you may find saving up more at a later time for one great LDC (perhaps the $300-$600 range) would give you the best results for a single LDC (although if you can find a used pair of NT1-A's, those are great solid mics which I used for several years and would recommend in a heartbeat).
Come up with a roadmap and write down where you are and where you think you are going. Buy mics accordingly.
