I've started to experiment with this and this is what I've found:
My mixer in my DAW has a stereo separation (or "width") control for each track that seems to simply stretch or squash a stereo signal. I guess what it does is either pan each channel to the extreme ends of the stereo field or condense them into a mono signal.
But there is also a plugin called Stereo Enhancer which features a dedicated separation control but also a "phase offset" which seems to do what you write about above (delay the signal in one or the other channel); there is also a pan option which I believe can be applied pre or post phase offset. So this must be what you were getting at, right?
